Scrumptious California Salmon

  1. In a small saucepan coated with cooking spray, saute garlic and shallot until tender. Add orange juice and vinegar. Bring to a boil. Reduce heat; simmer, uncovered, until reduced to 1/4 cup, 20-25 minutes. Stir in the honey, chili pepper, salt and pepper.
  2. In a large cast-iron or other ovenproof skillet, brown salmon in oil, about 3 minutes on each side. Brush with sauce. Bake, uncovered, at 400u0b0 until fish just begins to flake easily with a fork, 8-10 minutes.
  3. Brush with any remaining sauce and sprinkle with cilantro.
