Uncle Mike'S French Toast
- 8 thick slices white bread
- 4 extra large eggs
- 3/4 c. whole milk
- 1/4 tsp. vanilla extract
- 1 tsp. cinnamon
- 8 thin slices American cheese
- strawberry or raspberry preserves
- Crisco shortening or vegetable spray
- Preheat griddle or frypan using vegetable spray or Crisco shortening.
- Using medium bowl, beat 4 eggs with fork.
- Add milk, vanilla extract and cinnamon and beat until combined.
- Place 2 bread slices into mixture, coating both sides.
- Place bread onto griddle.
- When underside looks browned, turn.
- Place 2 slices of cheese on one slice of bread and place remaining browned slice on top of cheese (making a sandwich).
- Flip entire sandwich over until browned.
- Continue with remaining slices.
- Place on serving plate and top with strawberry preserves.
- Serves 4.
