Seafood Gumbo

  1. Add flour to hot oil in Dutch oven, stirring constantly until roux is dark golden brown.
  2. Stir in celery, peppers, onions and garlic.
  3. Cook 3 minutes, stirring constantly.
  4. Add tomatoes and water, simmering 15 minutes.
  5. Add shrimp, crab meat, sausage, okra and seasonings.
  6. Simmer 20 more minutes.
  7. Serve over cooked rice. A pint of oysters may be added with shrimp, if you like.
