Seafood Gumbo
- 2/3 c. oil
- 3/4 c. flour
- 1 c. celery
- 2 medium green peppers
- 2 medium onions
- 4 cloves garlic, minced
- 1 large can tomatoes, mashed
- 6 c. water (more if needed)
- 2 1/2 lb. small raw shrimp, peeled
- 1 lb. crab meat
- 2 links Smoky Hollow sausage, sliced
- 1 pkg. sliced frozen okra
- 8 chicken bouillon cubes
- 2 Tbsp. Worcestershire sauce
- 2 tsp. cayenne pepper
- 1/4 tsp. ground cloves
- 1 tsp. chili powder
- 1 Tbsp. salt
- 1/2 tsp. black pepper
- cooked rice
- Add flour to hot oil in Dutch oven, stirring constantly until roux is dark golden brown.
- Stir in celery, peppers, onions and garlic.
- Cook 3 minutes, stirring constantly.
- Add tomatoes and water, simmering 15 minutes.
- Add shrimp, crab meat, sausage, okra and seasonings.
- Simmer 20 more minutes.
- Serve over cooked rice. A pint of oysters may be added with shrimp, if you like.
