Aunt Daudies' Fruit Cake
- 1 c. orange juice
- 4 eggs
- 2 c. sugar
- 2 sticks margarine
- 4 tsp. baking powder
- 1 lb. red candied cherries
- 1 lb. green candied cherries
- 1 lb. candied pineapple
- 1 small box dates, chopped
- 1 can coconut
- 1 qt. chopped pecans
- 4 c. flour (plain)
- 1 tsp. vanilla
- 1/4 tsp. salt
- Soften margarine.
- In very large bowl, mix by hand the margarine, sugar and eggs.
- Add dry ingredients and orange juice. Add candied fruit, nuts, dates and coconut.
- Mixture will be stiff.
- Place in greased pans.
- Will make several small cakes. Fill pans to about 2/3 full.
- Bake in 225u0b0 oven (no higher) 3 hours or until light brown.
- Will store well for 2 to 3 months. Store, tightly covered.
