Cherry-Almond Snack Cake

  1. In a large bowl, beat the margarine, sugar substitute and honey. Beat in the egg and almond extract (mixture will appear curdled). Combine the flour, baking powder, baking soda and salt; add to the creamed mixture alternately with milk. Stir in almonds and cherries.

  3. coated with cooking spray. Bake at 325u0b0 for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.
