Chocolate Chip Pecan Mounds
- 1 c. butter or margarine
- 1 c. packed brown sugar
- 1 egg yolk
- 1 tsp. vanilla
- 2 c. all-purpose flour
- 1 (6 oz.) pkg. (1 c.) semi-sweet chocolate pieces or miniature semi-sweet chocolate pieces
- 2 slightly beaten egg whites
- 2 c. finely chopped pecans
- In a large mixer bowl beat butter or margarine until softened. Add brown sugar and beat until fluffy.
- Add egg yolk and vanilla and beat well.
- Add flour and beat until well mixed.
- Stir in chocolate pieces.
- Cover and chill about 1 hour or until easy to handle.
- Shape into 1-inch balls.
- Roll in egg whites, then in nuts.
- Place on a lightly greased cookie sheet.
- Bake in a 350u0b0 oven about 15 minutes or until done.
- (Centers will still be soft.) Remove and cool.
- Makes about 60.
