Beef With Peppers
- 1 lb. beef
- 1 1/2 Tbsp. oil
- 1 clove garlic
- 1 tsp. salt
- pepper to taste
- 1 c. soup stock
- 2 Tbsp. cornstarch
- 1 Tbsp. soy sauce
- 2 Tbsp. water
- 1 c. green pepper, sliced
- 1/2 tsp. fresh ginger
- 1 c. onion rings (optional)
- Heat skillet; add oil and crushed garlic (optional).
- When garlic turns brown, remove.
- Add beef; cut in small, thin pieces and fry a few minutes.
- Season with salt and pepper.
- Add soup stock and continue to cook a few minutes.
- Add mixture of cornstarch, soy sauce and water.
- Cook until sauce thickens, stirring slowly.
- Add green pepper and onion.
- Add ginger, chopped fine.
- Heat thoroughly and serve hot.
- Serves 4 to 6.
- May be served over rice or chow mein noodles.
