Lima Beans With Mushrooms And Celery
- 2 pkg. frozen lima beans
- 2 cans mushrooms or 1/2 lb. fresh
- 1 medium onion, minced
- 5 stalks crisp celery
- 1/4 lb. butter
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- 1/8 tsp. pepper
- 1/2 c. heavy cream (I use half and half)
- paprika (for garnish)
- a little sherry (if desired)
- Cook beans.
- Mince onion.
- Cut celery into 1/2-inch pieces as thick as a matchstick.
- Saute the onion and celery in butter until golden.
- Add mushrooms.
- Sprinkle flour, mixed with salt, nutmeg and pepper.
- Toss until well blended.
- Reduce heat and stir cream in.
- Add to cooked beans.
- I serve in a vegetable dish.
- Garnish with lots of paprika.
- Stir in a little sherry just before serving if desired.
