Easy Mint Patties

  1. In a mixing bowl, combine light corn syrup, softened butter or margarine and peppermint extract.
  2. Add powdered sugar, about 1 cup at a time, stirring until well combined.
  3. Stir desired food coloring into mixture.
  4. (Or, divide mixture in half and stir a different food coloring into each portion.)
  5. Shape candy mixture into 1-inch balls.
  6. Place the balls 2 inches apart on a baking sheet lined with waxed paper.
  7. Gently flatten each ball with the tines of a fork (or bottom glass, dipped frequently in confectioners sugar).
  8. Let candy stand at room temperature about 3 hours or until dry.
  9. Store tightly covered in refrigerator.
  10. Makes about 56 patties.
