Easy Mint Patties
- 1/3 c. light corn syrup
- 1/4 c. butter or margarine, softened
- 1 tsp. peppermint extract
- 4 3/4 c. sifted powdered sugar (about 1 lb.)
- 1 or 2 drops desired food coloring
- In a mixing bowl, combine light corn syrup, softened butter or margarine and peppermint extract.
- Add powdered sugar, about 1 cup at a time, stirring until well combined.
- Stir desired food coloring into mixture.
- (Or, divide mixture in half and stir a different food coloring into each portion.)
- Shape candy mixture into 1-inch balls.
- Place the balls 2 inches apart on a baking sheet lined with waxed paper.
- Gently flatten each ball with the tines of a fork (or bottom glass, dipped frequently in confectioners sugar).
- Let candy stand at room temperature about 3 hours or until dry.
- Store tightly covered in refrigerator.
- Makes about 56 patties.
