Date-Pecan Pie Bars
- 1-1/4 cups all-purpose flour
- 1/3 cup sugar
- 1/2 cup cold unsalted butter, cubed
- 2 large eggs
- 1/3 cup sugar
- 1/3 cup packed brown sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 2 tablespoons all-purpose flour
- 1 teaspoon baking powder
- 1 package (8 ounces) pitted dates, chopped
- 1 cup chopped pecans, toasted
- Confectioners' sugar, optional
- Preheat oven to 350u0b0. In a large bowl, mix flour and sugar; cut in butter until crumbly. Press onto bottom of a greased 9-in. square baking pan. Bake until lightly browned, 15-20 minutes.
- Meanwhile, in a large bowl, beat first six filling ingredients until just combined. Stir in flour and baking powder. Stir in dates and pecans. Pour over crust.
- Bake until filling is set, 20-25 minutes. Cool completely on a wire rack. If desired, dust with confectioners' sugar. Cut into bars. Refrigerate leftovers.
