Chocolate Pound Cake
- 3 c. sifted flour
- 1/2 tsp. baking powder
- 1 1/2 c. unsalted butter, softened
- 3 c. granulated sugar
- 5 large eggs
- 4 oz. unsweetened chocolate, grated
- 1 Tbsp. vanilla
- 3/4 c. cocoa
- 1/2 tsp. salt
- 1 1/4 c. milk
- confectioners sugar for dusting
- berries and mint for garnish
- Preheat oven to 350u0b0.
- Grease and dust with flour a 10-inch tube pan.
- Sift flour, cocoa, baking powder and salt into a large bowl. Cream the butter until fluffy and gradually beat in sugar. Beat in eggs, one at a time, beating well after each. Alternately beat in flour mix (in fourths) and milk (in thirds), beginning with flour.
- Add chocolate and vanilla.
- Pour into greased pan. Bake for 1 hour and 15 minutes until cake tester comes out clean.
- Cool in pan for 10 minutes inverted on rack. Cool completely before decorating cake with powdered sugar. Garnish with berries and mint, if desired.
