Chicken Pilau
- 2 c. cubed cooked chicken
- 1 1/2 c. rice (not instant)
- 1 large onion, sliced thin
- 1 clove garlic
- 1 to 3 hot chili peppers, chopped fine
- 1 bay leaf
- 1/4 tsp. turmeric
- 1/4 tsp. ground coriander
- 1/4 tsp. ground cardamon
- 4 to 6 whole cloves
- 2 cinnamon sticks
- 3 1/2 c. chicken broth
- 1 1/2 c. frozen peas
- 1 tsp. lemon juice
- 1 1/2 tsp. salt
- Cook onions in 3 tablespoons butter until golden.
- Add garlic, hot peppers, bay leaf, turmeric, coriander, cardamon, cloves and cinnamon sticks; cook briefly.
- Add chicken and rice; cook and stir about 5 minutes.
- Add the chicken broth, peas, lemon juice and salt.
- Bring to boil; cover and simmer 12 to 15 minutes.
- Do not overcook.
- Remove from heat; let stand 10 minutes.
- Place on large platter.
- Garnish with slices of hard-cooked eggs.
