Cucumber Relish
- 4 c. ground, unpeeled cucumbers
- 1 c. green pepper
- 3 c. ground onion
- 1/4 c. salt
- 2 c. white vinegar
- 1 Tbsp. mustard seed
- 1/2 c. sweet red pepper
- 3 c. finely diced celery
- 3 1/2 c. sugar
- 1 Tbsp. celery seed
- Use coarse blade of grinder.
- Combine all vegetables in large bowl; sprinkle with salt and cover with water.
- Let stand 4 hours. Drain thoroughly in a colander; press out all excess liquids.
- In pan, combine sugar, vinegar, celery seed and mustard seed.
- Bring to a boil, stirring until sugar is dissolved.
- Stir in drained vegetables.
- Simmer 10 minutes.
- Pack in pint jars and seal. Process in boiling water bath until vegetables are done, approximately 45 minutes to 1 hour.
- Yields 4 to 5 pints.
