Strawberry-Lemon Swirl Pie

  1. In a large bowl, mash the 2 cups strawberries.
  2. In a small saucepan combine sugar and cornstarch.
  3. Stir in the water and mashed strawberries.
  4. Cook and stir until mixture is thickened and bubbly.
  5. Cook and stir 2 minutes more.
  6. Stir in the lemon juice, margarine and the food coloring.
  7. Cover surface with clear plastic wrap.
  8. Cool and then chill.
