Low-Fat Bran Muffins
- 3 c. 100% Bran Flakes
- 3 c. skim milk
- 2 egg whites
- 2 Tbsp. vegetable oil
- 2 3/4 c. whole wheat flour
- 1 c. sugar
- 2 Tbsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 1/2 c. fruit or vegetable of choice (mashed bananas, grated apples, blueberries, grated zucchini, grated carrots, crushed pineapple)
- Combine bran flakes, milk, egg whites and oil; let stand for 5 minutes.
- Add all other ingredients and stir by hand until well blended.
- Spray muffin tins with nonstick cooking spray or use paper liners and fill tins 2/3 full of batter.
- Bake in preheated 400u0b0 oven for 15 to 20 minutes.
- Approximately 150 calories per muffin and 2 grams of fat.
- Makes 24 muffins.
