Herbed Minestrone Milano
- 15 oz. mild or hot ground turkey sausage
- 2 cups coarsely chopped cabbage
- 1 cup each diced onion, carrots, & celery
- 2 cups canned beef broth
- 2 cups canned tomatoes, cut up
- 1 large clove garlic, minced
- 1 1/2 tsp. basil
- 2 cups cooked vermicelli, which was broken into small pieces before cooking
- 1 cup frozen peas
- 1 cup fresh spinach, chopped
- 2 oz. zucchini, sliced
- In a large saucepan, brown sausage and cook cabbage, onion, carrot and celery with garlic and basil until tender.
- Add broth, tomatoes and zucchini.
- Bring to a boil, reduce heat and simmer 20 minutes or until done, stirring occasionally.
- Add remaining ingredients, heat and stir occasionally.
- Divide evenly.
- Serves 8.
