Chippy Cookie Mix
- 4 cups all-purpose flour
- 2 cups sugar
- 2 cups packed brown sugar
- 2 cups quick-cooking oats
- 2 cups crisp rice cereal
- 2 cups (12 ounces) semisweet chocolate chips
- 1 package (10 to 12 ounces) vanilla or white chips
- 1 cup chopped pecans
- 1/2 cup butter-flavored shortening
- 1 egg
- In a very large bowl, combine the flour, sugars and oats. Add the cereal, chips and pecans; stir until thoroughly combined. Place 2-3/4 cups each in five small resealable plastic bags. Store in the refrigerator until ready to use.
- 5 batches.
- In a small bowl, beat shortening and egg until blended. Add 2-3/4 cups cookie mix and mix well. Roll into 1-1/4-in. balls.
