Egg Salad Mold
- 1 envelope unflavored gelatin
- 3/4 c. cold water
- 1/2 tsp. salt
- 2 Tbsp. lemon juice
- 1/4 tsp. Tabasco pepper sauce
- 1 c. mayonnaise or salad dressing
- 1 c. finely chopped celery
- 1/4 c. finely chopped green pepper
- 1/4 c. diced pimiento
- 4 hard-cooked eggs, chopped
- Sprinkle gelatin over water in saucepan.
- Place over low heat; stir constantly until gelatin dissolves, about 3 minutes.
- Remove from heat; stir in salt, lemon juice and Tabasco.
- Gradually blend into mayonnaise.
- Chill, stirring occasionally, until mixture mounds slightly when dropped from a spoon.
- Stir in remaining ingredients.
- Turn into a 3-cup mold.
- Chill until firm.
- Unmold and garnish with salad greens.
- Makes 4 servings.
