Scalloped Corn
- 1 small green pepper, cut in strips
- 1/2 onion, minced
- 2 Tbsp. melted butter
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1/4 tsp. paprika
- 1/4 tsp. mustard
- dash of cayenne
- 1 c. milk
- 1 egg, slightly beaten
- 1 c. canned whole kernel corn
- 1 c. dried bread, broken in small pieces
- 1/2 c. melted butter
- Cook green pepper and onion in butter until soft.
- Add flour and seasonings.
- Mix well.
- Gradually add milk, stirring constantly, until thick and smooth.
- Add egg.
- Cook for 2 minutes longer.
- Add corn.
- Mix well.
- Turn into greased baking dish, 6 x 10 x 2-inch.
- Mix bread and melted butter.
- Sprinkle over top of corn mixture.
- Bake in hot oven at 400u0b0 for 20 to 25 minutes or until top is browned.
- Serves 5 to 6.
