Garbage Can Enchiladas
- 1 whole chicken, cut
- 1 can mushroom soup
- 1 can diced green chilies
- 1 large can enchilada sauce
- 1 whole onion, diced
- 1 block cheese (any kind)
- 1 pkg. corn tortillas
- 1 can diced black olives (optional)
- Cut whole chicken in small pieces, already cooked.
- Crock-pot is easiest.
- Grate cheese.
- Combine enchilada sauce, mushroom soup, green chilies, onion and black olives in large bowl.
- Cook tortillas in oil, then roll with all ingredients.
- Be sure to save a little cheese and sauce for top of enchiladas.
- After all are rolled and put in a pan, put leftover cheese and sauce on top. Bake at 350u0b0 in oven just until the cheese has melted.
- Also, you could substitute chicken for other meats.
