Shrimp Lovers Chili
- 1 large onion, chopped
- 2 tsp. oregano leaves, crushed
- 2 cloves garlic, minced
- 1 1/2 tsp. salt
- 1 Tbsp. olive oil
- 3/4 c. picante sauce
- 1 (8 oz.) can tomato sauce
- 1/2 c. beef or chicken broth
- 1 1/2 Tbsp. chili powder
- 2 tsp. ground cumin
- 1 1/2 c. yellow squash, cut into 1/2-inch pieces
- 1 lb. medium shrimp, peeled and deveined
- 1 1/2 c. zucchini, cut into 1/2-inch pieces
- Cook onion and garlic in oil in large pan until tender.
- Add picante sauce, tomato sauce, broth and seasonings; boil.
- Stir in yellow squash; cover and simmer 10 minutes.
- Stir in shrimp and zucchini.
- Cover and continue to simmer 8 to 10 minutes or until shrimp is cooked and vegetables are tender.
- Ladle into bowls. Add additional picante sauce.
- Serves 5.
