Sweet-And-Sour Ham(Good Source Of Protein, Thiamin And Niacin)

  1. Drain pineapple; reserve juice.
  2. Add enough water to juice to measure 1 cup.
  3. Cook and stir onion in margarine in 10-inch skillet over medium heat until onion is tender, about 5 minutes.
  4. Stir in ham, green pepper, salt, pepper, pineapple chunks and reserved pineapple juice.
  5. Heat to boiling; reduce heat.
  6. Cover and simmer until green pepper is crisp-tender, about 5 minutes.
  7. Mix cornstarch and cold water.
  8. Gradually stir into ham mixture.
  9. Heat to boiling, stirring constantly.
  10. Boil and stir 1 minute.
  11. Serve over rice.
