Mr. I'S-In-The-House Cookies
- 3 1/2 c. unbleached all-purpose flour
- 1 Tbsp. Hershey's cocoa powder
- 1 tsp. salt
- 1 1/2 tsp. baking soda
- 3 cubes margarine
- 1 box C & H light brown sugar
- 3 large eggs
- 1 tsp. vanilla extract
- 1 tsp. maple extract
- 12 to 16 oz. chips (I use either 1/2 bag Guittard white chocolate chips + 1/2 bag Nestle's butterscotch chips or 1/4 of a 48 oz. Price Club bag Ghirardhelli semi-sweet chocolate chips)
- Sift together dry ingredients in a 6 cup mixing bowl.
- In a separate bowl of at least 3-quart capacity, mix together margarine and brown sugar until totally creamy.
- Add 3 eggs, vanilla and maple extracts to the margarine/sugar mixture and beat it until it's fluffy.
- Pour
- the dry ingredients into the margarine/sugar mixture and carefully blend.
- Fold in chips.
