Seafood Stuffed Shells
- 15 uncooked jumbo macaroni shells
- 2 c. creamed (small curd) cottage cheese
- 6 Tbsp. milk
- 1 Tbsp. lemon juice
- 1 tsp. salt
- 1/8 tsp. pepper
- 1/2 c. parsley sprigs
- 1/2 tsp. dried basil
- 2 cloves garlic, crushed
- 1 c. celery, sliced
- 1 medium zucchini, coarsely chopped
- 1/2 c. chopped onion
- 6 seafood legs, cut in 1/2-inch pieces, cooked and chilled
- 2 (4 1/2 oz. each) cans shrimp, rinsed and drained
- Prepare macaroni shells.
- Chill 1 hour.
- Place cottage cheese, milk, lemon juice, salt and pepper in blender.
- Cover.
- Blend on high, stop occasionally to scrape sides, about 2 minutes.
- Remove and reserve 1/2 cup.
- Add parsley and basil to blender.
- Cover. Blend on high for 45 seconds, until smooth.
- Chill.
