Italian Burgers
- 1 lb. extra lean ground round or sirloin
- 1/4 c. finely chopped onions
- 1/4 c. finely chopped sweet red or green peppers
- 1 tsp. dried basil
- 1/2 tsp. dried oregano
- 1 clove garlic, minced
- freshly ground pepper
- 1 (14 1/2 oz.) can low-sodium stewed tomatoes
- 8 thick slices Italian bread, toasted
- 1/4 c. shredded reduced-fat Mozzarella cheese
- Mix beef, onions, sweet peppers, basil, oregano, garlic and black pepper. Shape into 4 burgers. Coat a nonstick skillet with nonstick spray and warm over medium-high heat. Add the burgers and brown on both sides. Add tomatoes and cook for 10 to 12 minutes. Serve burgers on toasted bread and top with 1 tablespoon cheese and 1 tablespoon of tomatoes and another toast slice.
