Marshall Field'S Cranberry Nut Muffins
- 4 1/2 c. flour
- 1 1/4 tsp. baking powder
- 2 tsp. salt
- 1/2 tsp. baking soda
- 1 1/2 c. sugar
- 1/2 c. (1 stick) margarine
- 2 eggs
- 1 c. cold water
- 3/4 c. orange juice concentrate
- 1 1/4 c. pecans, chopped
- 1 (12 oz.) bag cranberries, thinly sliced or chopped
- In a large mixing bowl, combine flour, baking powder, salt, baking soda and sugar.
- Blend in margarine.
- Add eggs, water and orange juice concentrate.
- With an electric mixer, beat batter at medium speed for 5 minutes.
- Add pecans and cranberries.
- Mix until well-distributed.
- Fill lightly greased muffin tins with batter.
- Bake in a preheated 350u0b0 oven until a toothpick inserted near the center comes out clean, about 35 to 40 minutes.
- Remove muffins from tins and cool completely on a wire rack.
- Make 24 muffins.
