Spicy Oven-Fried Chicken
- 2 cups buttermilk
- 2 tablespoons Dijon mustard
- 2 teaspoons salt
- 2 teaspoons hot pepper sauce
- 1-1/2 teaspoons garlic powder
- 8 bone-in chicken breast halves, skin removed (8 ounces each)
- 2 cups soft bread crumbs
- 1 cup cornmeal
- 2 tablespoons canola oil
- 1/2 teaspoon poultry seasoning
- 1/2 teaspoon ground mustard
- 1/2 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried parsley flakes
- Preheat oven to 400u0b0. In a large bowl or dish, combine the first five ingredients. Add chicken and turn to coat. Refrigerate 1 hour or overnight.
