Microwave Twice-Baked Potatoes

  1. Prick potatoes all over with a fork.
  2. Arrange in spoke pattern on a paper towel in oven.
  3. Microwave on HIGH 9 to 10 minutes, turning and rearranging potatoes once, until almost tender.
  4. Let stand 5 minutes until fork-tender.
  5. Cut off a thin lengthwise slice from tops of potatoes.
  6. Working over a medium-size bowl, scoop out potatoes, leaving 1/4-inch thick shells.
  7. Add milk and butter to bowl; mash until smooth.
  8. Stir in remaining ingredients.
  9. Spoon mixture into shells.
  10. Put potatoes on a microwave-safe plate and microwave on HIGH 2 to 3 minutes until filling is hot.
  11. Sprinkle tops with additional chives and bacon.
  12. Makes 2 servings.
