First Birthday Cupcakes
- 1 2/3 c. all-purpose flour
- 1 1/2 c. sugar
- 1/2 c. cocoa
- 1 1/2 tsp. baking soda
- 1 tsp. salt
- 1/2 tsp. baking powder
- 2 eggs
- 1/2 c. shortening
- 1 1/2 c. buttermilk or sour milk
- 1 tsp. vanilla
- One-Bowl Buttercream Frosting
- Heat oven to 350u0b0.
- Line muffin cups with paper baking cups. In large mixer bowl, stir together flour, sugar, cocoa, baking soda, salt and baking powder.
- Add eggs, shortening, buttermilk and vanilla.
- Beat on low speed of electric mixer 1 minute, scraping bowl occasionally.
- Then, beat on high speed for 3 minutes.
- Fill muffin cups 1/2 full with batter.
- Bake 18 to 20 minutes or until wooden pick inserted in center comes out clean.
- Remove from pan to wire rack.
- Cool.
- Frost with One-Bowl Buttercream Frosting. Garnish as desired.
- Yields about 2 1/2 dozen cupcakes.
