Sweet Potato Casserole
- 4 large sweet potatoes
- 3/4 c. butter
- 2 (7 oz.) jars Marshmallow Creme
- 2 large eggs
- 3/4 c. sugar
- 1 c. milk
- 1/3 c. butter
- 1/2 c. firmly packed light brown sugar
- 2 c. corn flakes cereal, crushed
- 1/2 c. chopped pecans
- Preheat the oven to 350u0b0.
- Cook 3/4 cup butter and Marshmallow Creme in Dutch oven over low heat, stirring constantly, until mixture is smooth.
- Beat cooked sweet potatoes, marshmallow mixture, eggs, sugar and milk at medium speed with an electric mixer, in batches, until smooth, stopping occasionally to scrape down sides.
- Spoon into a lightly greased 9 x 13-inch baking dish. Melt 1/3 cup butter and brown sugar in a small saucepan over low heat.
- Let cook 5 minutes.
- Stir in cereal and pecans.
- Sprinkle over potato mixture.
- Bake, uncovered, at 350u0b0 for 50 to 55 minutes or until browned.
- Makes 10 servings.
