Pumpkin Cookies
- 2 c. flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 c. margarine or butter, room temperature
- 1/2 tsp. nutmeg
- 1/4 tsp. ginger
- 1/4 tsp. cloves
- 1 tsp. cinnamon
- 1 c. sugar
- 1 egg
- 1 c. pumpkin (pureed)
- 3/4 c. raisins
- 1/2 c. nuts, chopped
- white or maple frosting (recipe to follow)
- Sift together flour, baking powder and baking soda.
- In a large mixing bowl, cream together margarine, cinnamon, nutmeg, ginger, cloves, sugar and egg until well blended.
- Gradually mix in pumpkin, sifted ingredients, raisins and nuts.
- Drop batter by rounded teaspoonful about 1-inch apart on lightly greased cookie sheets.
- Bake about 15 minutes or until just beginning to brown at edge.
- Remove cookies to rack and cool.
- Frost tops with white or maple frosting.
