Roasted Pepper Pimiento-Style Cheese
- 2 medium sweet red peppers
- 1 Anaheim pepper
- 1 jalapeno pepper
- 1 pound (16 ounces) cheddar cheese, finely shredded
- 4 ounces cream cheese, softened
- 1/2 cup mayonnaise
- 1 teaspoon sugar
- 1/2 teaspoon white pepper
- 1/2 teaspoon hot pepper sauce
- 1/8 teaspoon cayenne pepper, optional
- Assorted fresh vegetables and crackers
- Broil peppers 4 in. from heat on a foil-lined
- until skins blister, about 4-5 minutes. With tongs, rotate peppers a quarter turn. Broil and rotate until all sides are blistered and blackened. Immediately place peppers in a bowl; let stand, covered, 20 minutes.
- Peel off and discard charred skin. Remove stems and seeds. Finely chop peppers. Beat cheeses, mayonnaise, sugar, white pepper, pepper sauce and, if desired, cayenne until blended. Stir in peppers. Transfer to a serving bowl. Refrigerate, covered, at least 2 hours. Serve with vegetables and crackers.
