Roasted Pepper Pimiento-Style Cheese

  1. Broil peppers 4 in. from heat on a foil-lined
  2. until skins blister, about 4-5 minutes. With tongs, rotate peppers a quarter turn. Broil and rotate until all sides are blistered and blackened. Immediately place peppers in a bowl; let stand, covered, 20 minutes.
  3. Peel off and discard charred skin. Remove stems and seeds. Finely chop peppers. Beat cheeses, mayonnaise, sugar, white pepper, pepper sauce and, if desired, cayenne until blended. Stir in peppers. Transfer to a serving bowl. Refrigerate, covered, at least 2 hours. Serve with vegetables and crackers.
