Gingerbread Muffins
- 1/2 c. all-purpose flour
- 1/4 c. oatmeal or oat bran
- 1/4 c. white sugar
- 1/4 tsp. salt (optional)
- 1 tsp. cinnamon
- 1/4 tsp. allspice
- 3/4 c. low-fat buttermilk
- 1 egg and 1 egg white
- 1/2 c. whole wheat flour
- 1/4 c. brown sugar
- 1 tsp. baking soda
- 1 tsp. ginger
- 1/4 tsp. cloves
- 1/4 tsp. nutmeg
- 1/3 c. oil
- 1/4 c. molasses
- Preheat oven to 350u0b0.
- Spray muffin tins with Pam.
- Combine flour, sugars, soda, salt and spices in a large bowl; set aside. Combine buttermilk, oil, egg, egg whites and molasses.
- Add flour to buttermilk mixture; do not overmix.
- Pour into 12 muffin tins. Bake for 15 minutes, or until done.
- Serve warm or cold.
- Can be heated lightly; warm in microwave oven.
- Very good.
