Kabseh(For 4 People)
- 4 pieces chicken or more (the meat that you like)
- 2 Tbsp. oil
- 2 Tbsp. margarine
- 1 (6 oz.) can tomato paste
- 1 small onion, diced fine
- 1/2 c. peas and carrots (frozen section)
- 1/2 c. lima beans (frozen section)
- 2 c. basmati rice (or any other rice not processed), washed and drained
- salt
- 1/2 tsp. allspice
- 1/2 tsp. cinnamon
- 1/2 tsp. black pepper
- 10 cloves cardamon
- Add oil and margarine to pot; brown pieces of chicken on both sides.
- Set aside chicken.
- Toss onion in oil and margarine over heat until onion wilts.
- Add tomato paste to onion.
- Remove from heat; add chicken pieces, water to cover chicken, spices, cardamon and 1/2 teaspoon salt.
- Boil chicken for 30 minutes until done. Remove chicken; set aside.
- Sprinkle chicken with salt and pepper. Broil until broiler for 3 minutes.
