Kabseh(For 4 People)

  1. Add oil and margarine to pot; brown pieces of chicken on both sides.
  2. Set aside chicken.
  3. Toss onion in oil and margarine over heat until onion wilts.
  4. Add tomato paste to onion.
  5. Remove from heat; add chicken pieces, water to cover chicken, spices, cardamon and 1/2 teaspoon salt.
  6. Boil chicken for 30 minutes until done. Remove chicken; set aside.
  7. Sprinkle chicken with salt and pepper. Broil until broiler for 3 minutes.
