Summer Fruit Salad
- 1 (8 oz.) pkg. cream cheese, softened
- 1/4 c. milk
- 2 Tbsp. honey
- 1/4 tsp. almond extract
- 4 medium nectarines
- 1 medium cantaloupe
- 1 pt. strawberries
- 1/2 pt. blueberries
- watercress sprigs for garnish
- About 30 minutes before serving, in small bowl with mixer at low speed, beat cream cheese, milk, honey and almond extract until smooth, scraping bowl frequently with rubber spatula.
- Pour dressing into small bowl.
- Cut each nectarine into slices; discard pit.
- Cut cantaloupe lengthwise into quarters; discard seeds; cut off rind.
- Cut each cantaloupe quarter into wedges.
- Rinse strawberries and blueberries under running cold water; pat dry with paper towels.
- On chilled platter, arrange nectarine slices, cantaloupe wedges, strawberries, blueberries and cream cheese dressing in bowl.
- Garnish salad with watercress sprigs.
- Makes 6 salad or dessert servings.
