Oriental-Chicken Salad(Unusual And Delicious)
- 4 Tbsp. sesame seed
- 4 Tbsp. slivered almonds
- 1 c. light sunflower oil
- 6 Tbsp. rice wine vinegar
- 3 Tbsp. lemon juice
- 2 Tbsp. sesame seed oil
- 4 Tbsp. white sugar
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 head cabbage, coarsely cut
- 4 to 6 green onions, chopped
- 3 (3 oz.) pkg. Ramen noodles, broken and cooked according to pkg. directions
- 4 chicken breasts, cooked and shredded
- Toast sesame seed and almonds until golden.
- Set aside. Combine salad oil, rice wine vinegar, lemon juice, sesame seed oil, sugar, salt and pepper.
- In a large bowl, combine cabbage, onions, noodles and chicken.
- Toss well.
- Add dressing.
- Toss again.
- Marinate overnight for best flavor.
- Serves 6 to 8.
