Microwave Beef Stroganoff
- 1 Tbsp. vegetable oil
- 1 lb. boneless beef steak, cut in thin strips
- 8 oz. fresh mushrooms, sliced
- 1 medium onion
- 1/4 c. water
- 2 Tbsp. flour
- 1 tsp. dry mustard
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 c. sour cream
- 1 c. hot cooked rice or noodles
- Stir oil and meat in 2-quart casserole until beef is coated. Cover and microwave until meat is no longer pink (4 to 5 minutes). Remove from casserole and reserve juices.
- Add mushrooms and onion to meat juices. Cover, microwave until mushrooms are tender (5 to 6 minutes).
- Shake water and flour in covered jar.
- Stir in mushrooms.
- Microwave to a boil.
- Boil for 30 seconds.
- Add rest of ingredients.
- Serve over rice or noodles.
