Chicken Creole(Heart Smart)

  1. Cut chicken into 2 inch cubes. Heat oil in large skillet; saute onion. Add mushrooms and cook until liquid evaporates. Add garlic, celery and spices; cook 1 minute.
  2. Add peppers; cook 2 minutes. Stir in tomatoes; cook 5 minutes. Add wine, lemon juice and hot pepper; set aside.
  3. In another skillet, heat half the margarine; add chicken and sprinkle with black pepper. Cook on high; stir constantly until browned. Repeat with rest of chicken. Combine with Creole Sauce and simmer 2 minutes.
