Easy Ground Beef Lasagna
- 3/4 lb. ground beef
- 1 (32 oz.) jar spaghetti sauce
- 1 1/2 c. water
- 1 tsp. Italian seasoning
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 c. cottage cheese
- 3 c. shredded Mozzarella cheese
- 2 eggs
- 1 c. Parmesan cheese
- 8 oz. lasagna noodles
- Brown ground beef in saucepan, stirring until crumbly; drain. Add spaghetti sauce, water and seasonings; mix well.
- Simmer for 10 minutes.
- Mix cottage cheese, Mozzarella cheese, eggs and half the Parmesan cheese in bowl.
- Layer 1 cup sauce, 3 uncooked noodles, 1 1/2 cups sauce and half the cheese mixture in 9 x 13-inch glass baking dish.
- Repeat layers.
- Top with remaining sauce and 1/2 cup Parmesan cheese.
- Cover with plastic wrap, turning back edge to vent.
- Microwave on High for 25 minutes, turning once.
- Let stand for 10 minutes.
- Yields 8 to 10 servings.
