Cranberry Cream Mold(Makes 8 To 10 Servings)
- 1 c. orange juice
- 1 pkg. Vitamin C gelatin, orange flavor
- 1 (7 oz.) can cranberry jelly
- 1/4 c. cold water
- 1/4 tsp. salt
- 1 Tbsp. lemon juice
- 1 c. heavy cream
- Heat orange juice to boiling.
- Empty package of orange flavor into a large bowl.
- Add boiling orange juice to gelatin and stir until dissolved.
- Break up jelly with a fork and stir it into the dissolved gelatin.
- Add 1/4 cup cold water, salt and lemon juice.
- Chill until slightly thickened.
- Whip heavy cream and fold lightly into the thickened gelatin mixture.
- Pour into 1-quart mold.
- Chill until firm.
- Turn out and decorate with holly leaves.
- For the holly berries, select a few cranberries from a can of whole cranberry sauce or use fresh cranberries.
