Eggplant Fritters
- 1 large eggplant (about 1 1/2 lb.) cut into 1/2-inch slices
- 2 Tbsp. olive oil
- 1 egg, lightly beaten
- 2 cloves garlic, crushed
- 4 Tbsp. fresh parsley, chopped
- 2 1/4 c. fresh white bread crumbs
- 1 c. grated Parmesan cheese
- 1 cup Feta cheese, crumbled
- 3 Tbsp. flour
- vegetable oil for frying
- salt and pepper
- Plain yogurt (or sour cream) flavored with fried red chilies
- 1 lime, cut in wedges
- Preheat oven to 375u0b0.
- Brush eggplant slices with olive oil, place on baking sheet and bake 20 minutes or until golden and tender.
- Chop slices finely and combine in a bowl with egg, garlic, parsley, bread crumbs, Parmesan and Feta.
- Add salt and pepper to taste.
- Let mix stand for 20 minutes.
- If it looks very sloppy, add more bread crumbs.
