Peaches And Cream Cheese Cake
- 3/4 c. self-rising flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 (3 1/8 oz.) pkg. vanilla pudding mix
- 3 Tbsp. margarine, softened
- 1 egg
- 1/2 c. milk
- 1 (16 oz.) can sliced peaches (undrained)
- 1 (8 oz.) pkg. cream cheese
- 1/2 c. sugar
- 1/4 tsp. cinnamon
- 1 1/2 tsp. sugar
- Combine the first 7 ingredients in mixing bowl; beat at medium speed until smooth.
- Pour mixture into greased 8-inch round cake pan.
- Drain peaches, reserving 3 tablespoons of liquid; set aside. Arrange peaches over batter.
- Combine cream cheese, 1/2 cup sugar and reserved peach juice; beat for 2 minutes at medium speed. Spoon mixture over peaches in center of cake, leaving a 1-inch border around edge of pan.
- Combine 1 1/2 teaspoons sugar and cinnamon; sprinkle over cream cheese filling.
- Bake at 350u0b0 for 30 to 40 minutes.
- Remove; cool and chill.
