Chocolate Zucchini Cake
- 1/2 c. butter or oleo, softened
- 1/4 c. vegetable oil
- 1 3/4 c. sugar
- 1/2 tsp. salt
- 2 eggs
- 1 tsp. vanilla
- 1/2 c. water
- 2 1/2 c. flour (all-purpose)
- 2 Tbsp. SACO buttermilk powder
- 4 Tbsp. cocoa
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 3/4 tsp. cinnamon
- 1/2 tsp. cloves
- 2 c. grated, unpeeled zucchini
- Preheat oven to 325u0b0.
- Grease and flour a 9 x 13-inch pan.
- In large mixing bowl, cream together butter, oil, sugar, salt, eggs, vanilla and water.
- Sift together remaining dry ingredients.
- Add to liquid ingredients and mix well.
- Add grated zucchini and stir until blended.
- Pour into prepared pan and bake 40 to 45 minutes or until wooden toothpick inserted in center comes out clean.
- Cool and frost with favorite icing.
