Fruit Cake Cookies
- 1 1/2 c. brown sugar
- 2 eggs
- 1 tsp. cinnamon
- 1 tsp. baking soda, dissolved in 2 Tbsp. boiling water
- 1 c. butter or margarine
- 2 1/2 c. flour
- 1 tsp. salt
- 2 lb. dates, cut into thirds
- 3 slices glace pineapple, cut into wedges
- 1 1/2 lb. glace cherries, cut into halves
- 1/2 lb. walnut meat halves
- 1/2 lb. pecan halves
- 1/2 lb. Brazil nuts, cut into thirds
- Cream butter and sugar.
- Add eggs and dry ingredients and soda mixture.
- Mix well and add fruits and nuts.
- The dough is very stiff; use hands to mix.
- Drop by teaspoon on cookie sheet.
- Bake at 325u0b0 for 10 to 12 minutes.
- Keep stored in airtight container. Also can be frozen.
