Sweet Potato Apple Casserole

  1. In a pot with a tight-fitting lid, steam sweet potatoes in 1/2 cup water until tender, 15 to 20 minutes.
  2. Peel and slice them lengthwise in 1/2 inch thick slices.
  3. Layer them in a casserole. Peel and core apples, slicing them 1/2 inch thick.
  4. Layer apple slices on top of sweet potatoes.
  5. Heat apple juice to the boiling point.
  6. Combine cornstarch and water and add to juice, cooking until sauce is clear and thickened.
  7. Add honey.
  8. Spoon sauce over apples, then top with wheat germ.
  9. Bake in a 350u0b0 oven until apples are tender, 30 minutes to an hour.
  10. Yield:
  11. 6 servings.
