Applesauce Cake
- 1/2 c. margarine
- 1 c. sugar
- 1 egg
- 1 c. prunes, cut fine
- 1 c. raisins
- 1 3/4 c. applesauce (unsweetened)
- 1 tsp. vanilla
- 2 c. flour, sifted
- 1/2 tsp. cinnamon
- 1/4 tsp. cloves
- 1/2 tsp. nutmeg
- 1/4 tsp. allspice
- 2 tsp. baking soda
- Put fruit in bowl with a little flour just to coat fruit. Cream butter and sugar.
- Add beaten egg and vanilla; stir.
- Add fruit and applesauce; stir.
- Sift flour with all spices and baking soda (at least 3 times) and add; stir.
- Grease and flour pan.
- Bake at 350u0b0 in 11 1/2 x 7 1/2 Pyrex pan 30 to 40 minutes, or in 11 x 7-inch Pyrex pan for 40 to 45 minutes.
- Stand at least one day before cutting.
