Hearty Brunch Bread
- 1 c. whole wheat flour
- 1/2 c. all-purpose flour
- 1/2 c. quick cooking oats (uncooked)
- 1/2 c. firmly packed brown sugar
- 1/4 c. unprocessed wheat bran
- 1 tsp. baking soda
- 1/2 tsp. ground cinnamon
- 1 c. plain low-fat yogurt
- 2 egg whites, beaten
- 1/2 c. raisins
- 1/4 c. chopped pecans
- vegetable cooking spray
- Combine first 7 ingredients in a large bowl and stir well. Make a well in the center of the mixture.
- Combine yogurt and egg whites.
- Add dry ingredients.
- Stir just until dry ingredients are moistened.
- Fold in raisins and pecans.
- Spoon batter into an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray.
- Bake at 350u0b0 for 1 hour or until done.
- Cool in pan for 10 minutes.
- Remove from pan.
- Yield: 16 servings.
- Contains 103 calories, 3.3 protein, 1.9 fat, 19.4 carb. and 1 chol. per serving.
