Chicken With Cashews, Mushrooms And Bean Sprouts
- 6 dried shiitake mushrooms
- 3 Tbsp. soy sauce
- 2 Tbsp. dry sherry
- 1 tsp. sugar
- 1 lb. skinless, boneless chicken breast, cut crosswise into 1/2-inch strips
- 3 Tbsp. vegetable oil
- 1 c. cashews
- 4 scallions, sliced
- 1/4 lb. fresh mushrooms, sliced
- 1 garlic clove, minced
- 1/2 c. fresh bean sprouts
- 1/2 c. chicken broth
- 2 tsp. cornstarch
- Place shiitakes in a heatproof bowl.
- Add boiling water to cover and soak 20 minutes.
- Remove mushrooms and squeeze dry.
- Cut off and discard stems; slice caps.
- In a medium bowl, combine soy sauce, sherry and sugar.
- Add chicken and toss to coat.
- Set aside.
