Chicken With Cashews, Mushrooms And Bean Sprouts

  1. Place shiitakes in a heatproof bowl.
  2. Add boiling water to cover and soak 20 minutes.
  3. Remove mushrooms and squeeze dry.
  4. Cut off and discard stems; slice caps.
  5. In a medium bowl, combine soy sauce, sherry and sugar.
  6. Add chicken and toss to coat.
  7. Set aside.
