Sweet Chocolate Muffins

  1. Preheat oven to moderate (375u0b0).
  2. Line 18 muffin cups with paper baking cups.
  3. Melt butter and chocolate in top of double boiler over hot, not boiling, water.
  4. Beat together egg yolks and sugar in small bowl with an electric mixer until well mixed and lemon-colored.
  5. Add chocolate mixture; blend well.
  6. Sift together flour, baking powder and salt onto waxed paper.
  7. Beat flour mixture alternately with milk and vanilla into chocolate mixture with electric mixer at low speed, beginning and ending with dry ingredients, until blended.
  8. Beat egg whites in small bowl with clean beaters until stiff, but not dry, peaks form.
  9. Fold gently into batter.
