Banana Bran Bread(Diabetic. This Bread Slices Best On The Second Day)

  1. In a small bowl, stir together flour, sugar replacement, baking powder and salt.
  2. In medium bowl, stir together cereal and milk.
  3. Let stand 1 to 2 minutes or until cereal softens.
  4. Stir in bananas, oil and egg until well mixed.
  5. Stir in flour mixture just until blended.
  6. Turn into a greased and floured mixture just until blended.
  7. Turn into a greased and floured 8 x 4 x 2-inch pan. Bake at 350u0b0 for 1 hour or until cake tester comes out clean. Cool in pan for 10 minutes.
  8. Remove from pan.
  9. Cool completely on wire rack.
  10. Yields 1 loaf, 16 slices.
