Banana Bran Bread(Diabetic. This Bread Slices Best On The Second Day)
- 2 c. all-purpose flour
- 1/4 c. granulated sugar replacement
- 1 Tbsp. baking powder
- 1/4 tsp. salt
- 1/2 c. whole bran cereal
- 1/2 c. skim milk
- 1 c. ripe banana (about 3), mashed
- 1/3 c. Mazola corn oil
- 1 egg, lightly beaten
- In a small bowl, stir together flour, sugar replacement, baking powder and salt.
- In medium bowl, stir together cereal and milk.
- Let stand 1 to 2 minutes or until cereal softens.
- Stir in bananas, oil and egg until well mixed.
- Stir in flour mixture just until blended.
- Turn into a greased and floured mixture just until blended.
- Turn into a greased and floured 8 x 4 x 2-inch pan. Bake at 350u0b0 for 1 hour or until cake tester comes out clean. Cool in pan for 10 minutes.
- Remove from pan.
- Cool completely on wire rack.
- Yields 1 loaf, 16 slices.
